I thought it was the perfect time to share another baking blog post. The last one I did was with Easter and that already seems like such a long time ago. I feel like 2016 is flying by because it is already May. How is it already May? Before I know it I will be on an airplane to Greece, wow! I got a little side tracked there but this blog post is about one of my definitely guilty pleasures. My mom made millionaire’s shortbread first a couple of years ago. When I first ate it, I didn’t expect to like it so much. So of course I couldn’t not share this with you. Put on this relaxing playlist and let’s get started with the millionaire’s shortbread!
Here are the ingredients you’ll need for the dough: 250 grams of flour, 75 grams of crystal sugar and 175 grams of butter. This is what you need for the caramel: 0,8 liter of condensed milk, 100 grams of cane sugar and 100 grams of butter. For the top of the millionaire’s shortbread there’s only one thing you need and that is 250 grams of dark chocolate. Besides the ingredients, you also need a tin, baking paper and a whisk. Now let’s get the chocolate fun started!
First you want to start with the base of your millionaire’s shortbread and that would be (yes, you guessed correctly) the dough. When you’ve measured and weighted everything you need for the dough, preheat your oven at 180 ºC. While your oven is on, grease the tin, put in the baking paper and start making your dough. Put the flour, sugar and butter together in one bowl and start mixing. You can do this by hand or with a mixer. When the mixture starts looking like breadcrumbs, you’re done mixing.
Put your breadcrumbs evenly in your tin and press them down. You can do this with a spoon but also with your hands. Then you have to put the dough in the oven for about 20 minutes until it looks golden brown, the first part of this recipe is done. On to the next!
For the caramel you just put everything (the condensed milk, butter and cane sugar) in a heat resistant bowl and put it in the microwave for about 10 minutes. Make sure to stir the caramel every 2 to 3 minutes with the whisk. Beware, the bowl can overflow because of the heat… So make sure you keep checking it and if you see it’s going to overflow, just take it out and stir it for a bit and put it back in.
After 10 minutes (or more) it should have a thick syrupy texture. If you have that type of texture, put the caramel on the baked dough and smoothen it out. Now you have to wait until it’s all cooled down before you can start with the next part. Make sure that the caramel is completely cooled down, otherwise the caramel and chocolate will mix together and that’s something we don’t want.
It’s chocolate time! ? I am already getting hungry just looking at this GIF above… Anyways, there’s only one thing left to do and that’s melt the chocolate. There are two different ways to do this. Number one is the easiest way. You just break the chocolate into little pieces, put it in a heat resistant bowl, put it the microwave for a couple of minutes (it depends on how hot your microwave gets) and stir every 30 seconds.
The other way is to put the chucks of chocolate into a heat resistant bowl and put it on top of a pan with cooking water in it. This is the method I used and it’s actually a very quick way to melt the chocolate. You do have to keep stirring the whole time it is on top of the water. If you don’t, the chocolate will burn. When the chocolate is completely melted, take a spatula and pour the melted chocolate over the caramel. Just like the caramel, this has to be smoothened out and you can actually put it in the fridge to let it cool down. I just left it in there for about an hour and then it was ready to be devoured!
Voilá, your millionaire’s shortbread is done! When you’re serving this on a birthday or party, just cut little rectangles so you can give them out as snacks. When you just want to have it for yourself, cut it into bigger squares to have with a cup of coffee or just when you feel like eating something very tasty haha. What did you think of this recipe?
