Donut Worry, Be Happy | Mini Donuts

Last Friday was a special one because it was National Donut (or doughnut) Day in the USA! And even though I do not live there, that doesn’t mean I can’t celebrate this very special holiday. Of course you have to celebrate Donut Day with a donut and since I’ve always wanted to bake donuts myself, and that’s what I did. In this blog post you’ll see the recipe and how my donuts turned out!

For these cute mini donuts, I used this recipe from As Easy As Apple Pie. For the donuts you’ll need: 120 grams of self rising flour, 100 ml of milk, 70 grams of granulated sugar, 2 tablespoons melted butter1 egg, 1 teaspoon of vanilla extract and 1/2 teaspoon (a pinch of) salt. Since we also want to glaze the donuts, these are the things you’ll need for the glaze: 80 to 100 grams of powdered sugar, 1 or 2 tablespoons of milk and 1/2 teaspoon vanilla extract. Besides all of the ingredients listed above, you also need some tins to bake your donuts in. I used a six (this one) and twelve (this one) sized donut tin from Wilton and these work perfectly.

Let’s get started with the batter of the donuts. First I would recommend already spraying your donut tins with nonstick spray, otherwise your donuts won’t come out in the end and that’s something we don’t want. Then you can start with the mixture. First get a bowl to mix the self rising flour, sugar and salt together. Grab another bowl and whisk the butter, milk, egg and vanilla extract together. When you’ve done that, add the wet ingredients to the dry ingredients and whisk those together. Whisk enough to make sure there aren’t any flour bits left in the mixture.

Now you can get the sprayed donut tins out again because it’s time to add the mixture to the tins. This is a pretty messy job and there are different things you can do to make a little less messy. You can add the mixture to a ziplock bag, cut a corner off the bottom and pip the mixture into the donut tins. Or you can add the mixture to the tins by just using a spoon. Oh, and don’t forget to only fill the tins 3/4 of the way, otherwise your donuts will look pretty weird.

Put the tins in a pre-heated oven of 175 °C for about 10 minutes. It depends on you oven how long they need to be in there so it could be longer or shorter. When your donuts are fully baked, take them out of the oven and let them cool off for a little before taking the out of the tins and put them on a wire rack.

Donuts aren’t complete without any glaze and decoration, right? So for the glaze you can just buy pre made glaze or make your own. I did both. For the selfmade glaze, you just need to put the powered sugar, milk and vanilla extract in a bowl and mix them together. Add more milk if the glaze is too thick or add more powered sugar if the glaze is too thin. Make the donuts more fun with adding some food coloring to the glaze. Dip the donuts in the glaze, put them on the wire rack again and add some sprinkles if you like. Now let the glaze set for about an hour before consuming these delicious donuts.

And above you can see the end result! I went for lots of different colored glazes and sprinkles, as you are able to see. I love how the donut look and let me tell you, they taste even better. If I had known how good homemade baked donuts were, I would have made them a lot earlier than I did. Everyone needs to try them, you will regret it if you don’t. Do you love donuts as well?
