I’ve Got Sunshine On My Mind | Summer Picnic Party

Most of the time people barbecue during summer. I just felt like organizing a picnic is also fun to do. For a picnic you are also able to make different types of food and drinks beforehand and take it with you and just enjoy it wherever you like. This summer there are a couple of foods and drinks I’ve been loving and I thought they were perfect for a picnic as well. These foods and drinks are very easy to make and of course very tasty! ☀️

First things first, what is important when you’re organizing a summer picnic? I know, a couple of things are important but you’ll definitely need friends or family to keep you company at your picnic. You can just send them an easy text inviting them to come over. If you are in a creative mood, you can also make a cute invitation in the vibe/theme of your picnic. I decided on a theme and I can describe it in these three emojis: 🌸 | 🌿 | 🍸

With choosing a theme for your summer picnic also comes the important part of decorating. For this I went on Pinterest to look for some inspiration. I’ve actually made a board with party inspiration, which you can find here. In the end I went for some table decorations and straws that matched the theme. I just searched for some leaves on the internet and cut these out with different types of colored papers in different sizes. Of course you can also make a banner with these cut outs if you like to have that instead of table decorations.

Drinks are very important because you always have to stay hydrated. For this summer picnic I decided to make my very beloved pink lemonade. I did a blog post about my two favorite mocktails for the summer a little while ago. It’s so easy to make and very tasty so if you want to make it for your picnic as well, you can find the full recipe here.

On to the most important part of the summer picnic party, and of course that is the food! For a picnic I think it is always nice to have a selection of different foods. That’s why I decided to make some snacks and also some larger things to eat. For a snack I made nachos (which are so delicious) and some wraps. Nachos are really easy to make. Just buy some tortilla chips, add some spices to it, cover them with cheese and pop them in the oven for a little. And whenever we have a party, we always have a selection of wraps with different toppings on it. Right now I am really loving wraps with some spicy hummus and rucola.

Besides the snacks, I also made some other things. First I made a falafel burger. Since I haven’t been eating meat, I have been really into falafel. It’s just so good! At the supermarket I bought pre made falafel and made my very own burgers with it. You just bake these in a pan for about five minutes, put the burger on a bun, add some lettuce of your choice (and some sauce if you like that) and it’s done. You can see the end result of the falafel burgers in the photos below. Don’t they look good? Oh, and I also made a very easy version of a pizza. All you need is a wrap, add some red pesto to it, put some toppings on you like, pop it in the oven for about 5 to 10 minutes and you have a pizza! Very easy to make and it always tastes good.

After doing this blog post, I thought I should definitely do more of these type of posts. I absolutely loved creating everything and it’s kind of like setting up an event. Since I love to cook and bake, this is great to make. With different decorations you can make the whole summer picnic your own style and feeling.     Heerlijke zomerkriebels bij het zien van die foto’s. Ik doe soms een mini picknick met mijn zoontje maar dan is het vooral boterhammen kaas en chips, haha

    Ohhh ziet er allemaal super lekker uit! Ik heb zelf ook even zonder vlees geleefd, maar dat lukte niet zo goed. Nu eet ik een keertje per week vegetarisch, en dat lukt me perfect!
