Life Is What You Bake Of It | Date Pie

I believe it was about a year ago when I first had a date pie. Someone had made it and when I tried it, I immediately wanted to know the recipe. That’s when I discovered it’s a recipe from Bagels & Beans, which you can actually find online. The recipe has been saved on my computer for such a long time but I never got around to trying the recipe but I finally did! In this blog post I share the recipe with you so you’ll be able to try this date pie as well ?

Before you start doing anything, I think you should first measure all of the different things you need. The ingredients you’ll need for this date pie are: 500 grams of dates, 250 grams of butter, 150 grams of brown sugar, four tablespoons of caramel syrup, one hand of walnuts, one packed of biscuits, one egg and coconut to garnish. Besides that you also need a baking tin, a baking sheet and one very important thing, a pan.

Like I just said, I would recommend measuring and preparing all of the ingredients before starting with the date pie. First, you need to cut all of the dates into small pieces. I cut mine in small strips but I would recommend using a blender of some sort to make the pieces a lot smaller. Second, I made sure to smash the packed of biscuits. I put the biscuits in a plastic bag and smashed them into little pieces. I didn’t really know what size would be best but with these I think pieces of about one centimeters are perfect. Then cut the walnuts in little pieces (just like the biscuits) and also weigh all of the other ingredients.

After measuring and preparing everything, you can put your pan on the stove with very low heat. Put the 250 grams of butter in the pan and let this completely melt. You can make this go faster when you stir the butter around the pan. When the butter is completely melted, you can add the 150 grams of brown sugar. Make sure your stove is still on low heat because otherwise the sugar will burn into your pan. That’s why you should also keep stirring until the brown sugar and butter make a smooth consistency.

Before adding the egg, first whisk it in a separate bowl. After you’ve stirred the egg through the butter and sugar, you can add the four tablespoons of caramel syrup. Keep stirring in the meantime and then you can add the main ingredient, the dates. Don’t add them in all at once since there are so many just scoop them through everything that’s already in your pan.

Then it is time to add the biscuits and walnuts to the mixture in your pan. Now it gets a bit harder to stir but you can just scoop the biscuits and walnuts through it. Now you can take the pan of the heat and begin preparing your tin. I put baking paper at the bottom of the tin, put the tin back together and use some of butter to grease the sides. A very important thing to do because you still want to get the pie out the tine when it’s done.

Now grab the pan with the mixture in it and add it all into the tin. Be careful because the pan is still hot and the mixture as well. I used a spoon to spread it evenly over the whole entire tin. Make sure to get it to the sides otherwise your pie will look so weird. The only thing you have to do is to put the date pie in fridge for about one and a half hours because you have to let it set.

There’s only one thing left to do and that’s add the coconut on top to garnish you date pie and then it’s to be eaten! This is such a delicious pie to eat but I would recommend having a small piece of it since it is really filling. You don’t have to keep it in the fridge all the time because then it will be get very hard. I hope you’ll enjoy this pie as much as my family and I did! Have you ever eaten a date pie?
