Stay Sweet As Strawberries | Strawberry Crumble Squares

One thing I’ve always wanted to try is baking with strawberries. They are one of my favorite fruits and of course I have put them on a cheesecake I’ve made, but never used in (or as the main ingredient) one of my bakes. So, when I found this recipe of strawberry crumble squares, I just had to try it. After seeing the (easy) recipe, steps to take and my photos, I am sure you’ll want to go and bake these yourself as well!

What you’ll need250 grams of all-purpose flour, 160 grams of unsalted butter in cubes, 120 grams of packed light brown sugar, 1 large egg, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon pure vanilla extract, chopped strawberries, 50 grams of granulated sugar and 1 tablespoon cornstarch (recipe inspired by Spoonful of Flavor).

How to | Like always, I start by weighing and measuring all of the ingredients to make the process of baking these strawberry crumble squares even easier and faster. After the prepping of the ingredients (as listed above), I grabbed a square baking tin, greased this and added baking paper to make it easier to get out when it’s all done. Then I grab one bowl (for dry ingredients) and whisk the flour, baking powder and salt. To this bowl also add the butter (make sure it’s cold) and use your hands to mix it all together. When it turns into a crumb-like mixture, this is done. In another bowl (for wet ingredients) whisk the brown sugar, egg and vanilla extract until it’s all combined. Then it’s time to add the dry ingredients to the wet ingredients. Combine these two by using a spatula or just your hands, like I mostly do. This should also turn into a crumble-like mixture.

Now it’s time to add the crumble-like mixture to your baking tin, but only about 2/3 from the mixture. This part of the mixture will be the bottom of your strawberry crumble squares. Make sure to press it down so it’s compact and will form a great base for the strawberries. How to make the strawberry part of the strawberry crumble squares? Decide on how many strawberries you want to use. I eyeballed the strawberries until I thought I got enough to cover the bottom in the baking tin. Just cut the strawberries in smaller pieces and add those to a small bowl with the sugar and cornstarch and mix, mix, mix! With a spoon add the strawberries to your baking tin. Now you only have some crumble-like mixture left over and you’ll use this to add the ‘crumble’ to your strawberry crumble squares. Just sprinkle the crumble all over the strawberry part until you feel like it’s distributed evenly.

Put it in the oven (at 180 °C) and bake the strawberry crumble squares for about 40 to 50 minutes. Make sure to check it every once in awhile because sometimes it might take longer and other times shorter. When the top is golden brown and the strawberry layer is bubbling, they are done and you can remove the baking tin from the oven. It’s important to first let it cool down and then cut it into squares to complete the strawberry crumble squares!

Drumroll please… And the strawberry crumble squares are ready to be eaten! When I first put it in the oven, I wasn’t sure if they would turn out the way I thought, but… they really did. They tasted amazing and I will for sure be making strawberry crumble squares again! Next time I also want to try to make these with blueberries or apple?     Helaas ben ik gen keukenprinses. Ik draai mijn hand niet om voor een lekkere gado gado of sajour (groentegerecht) maar bakken? Dat is een ander verhaal. Ooit de staafmixer bijna stukgemaakt op harde roomboter (wist ik veel dat ik dat eerst zacht moest laten worden). Dit ziet er wel heel lekker uit. Ik ben dol op aardbeien en ik krijg acuut trek nu 🙂
