Confession time: I loooooooove pancakes. Yes, it’s true. I’ve posted blogs about pancakes before (like this and this one). We often eat pancakes, always homemade but never fully vegan. The past couple of months I am learning so much more about nutrition and I am just very interested in trying to eat vegan. To me (and I think to a lot of other people) eating vegan sounds difficult because you have to check and see if the ingredients have animal products in them. But when I was researching how to make vegan blueberry pancakes, it was actually very easy! Most of the products I already owned and there were just a couple of ingredients I had to double check and see if they were vegan. So, it isn’t that hard and therefore you must try and make these vegan blueberry pancakes!
What you’ll need | 240 ml of almond milk, 130 grams of spelt flour, two tablespoons of organic sugar, one tablespoon with baking powder, one tablespoon of apple cider vinegar, one teaspoon of vanilla extract, a pinch of salt, a pinch of cinnamon, agave syrup and blueberries (recipe inspired by Tasty).
How to | Like always, I started by measuring all of the ingredients. Then grab a bowl to mix all of the dry ingredients together. So add the flour, sugar, baking powder, salt and cinnamon and start stirring to combine all the dry ingredients. Get another small bowl and add the almond milk, apple cider vinegar and vanilla extract to mix it all together. Let this mixture rest for about five minutes before adding it to the dry ingredients.
After about five minutes, mix the dry and liquid ingredients together until you have a smooth batter. Leave this mixture again for about five minutes. My mixture was still pretty liquid, so I added a little more flour to make the mixture thicker.
Now it’s time to bake the pancakes! I first made sure the pan was hot enough (medium heat I would say) and added plant-based butter to the pan to bake the pancakes in. Depending on the size of your pan, decide how much batter you want to add to make the perfect American pancake size. Since these are blueberry pancakes, add a couple of blueberries to the batter in your pan. When the top of the pancake begins to bubble, it’s time to flip the pancake. Then cook the pancake until golden and put it on a plate. Stack all of the blueberry pancakes on top of each other to create a beautiful pancake tower. After your pancake batter is all gone, serve the pancakes with some more blueberries and of course some agave syrup and your tasty vegan blueberry pancakes are done!
Let me tell you, I didn’t expect making vegan pancakes would be so easy. In the future I will definitely be making them again because they were suuuuuuper delicious!
