I have talked about this before so you might know that I decided to stop eating meat. I can’t even remember the last time I really ate meat so I think it’s been a long time. This year I’ve also decided to not eat fish anymore. That’s something I did used to eat every once in awhile, also on a sandwich. That’s why I had to think of something else to eat on a sandwich and that’s also how I came up with this blog post idea. It’s just a way to share some tasty vegetarian options with you that you might also want to try!
#1 || Vegetarian Sandwich Caprese
One of the most well-known vegetarian sandwiches has to be the caprese sandwich. It is almost always on a menu when I have lunch somewhere. Anyways, for a caprese sandwich I use a slice of focaccia or sour dough bread and spread a layer of pesto on it. Wash the tomato, cut it in slices and also drain the mozzarella from most of its juices and cut it as well. Add as many mozzarella slices as possible on top of the pesto layer and then add the tomato slices. As a final touch add basilicum or other herbs of your choice. To change it up a little, use red pesto instead of the normal green one. I prefer red pesto so much more because it’s soooo good.
#2 || Vegetarian Sandwich Hot Hummus
Whenever I bring lunch with me to work (which is every day actually), I use hot hummus. If you haven’t tried this before, you really should because it’s delicious. When it comes to making a sandwich with my fave hummus, I firstly wash my lettuce & paprika and cut both into smaller pieces. Then I grab a slice of sour dough bread, spread a thick (yes, thick) layer of hot hummus on it, add the lettuce and paprika on top. This sandwich is also really nice with tomatoes and cucumbers as well.
#3 || Vegetarian Sandwich Veggie Paté
I am loving all of the vegetarian options they have available nowadays, like from De Vegetarische Slager. Dutchies definitely know what I am talking about. They have the best vegetarian burgers and now they also have vegetarian paté. When I did eat meat, I ate paté every once in awhile. When I discovered the vegetarian version, I had to try it and it really tastes the same! To create the ultimate vegetarian sandwich with the veggie paté start with spreading the paté on a piece of sour dough bread, add a drop of chilli sauce (to add some spice) and crumbled nuts (for an extra bite). I am sure you’ll love this sandwich as much as I do!
#4 || Vegetarian Sandwich Cream Cheese
The last vegetarian sandwich is very simple but that doesn’t mean it’s not delicious. When I feel like having something different, this is what I actually make. First I wash my vegetables (again, like you always should), which are tomatoes and cucumbers for this sandwich. On my piece of sour dough bread I put some cream cheese, then add the slices of tomato, cucumber and sprinkle some pepper on it. Btw, you should also try hüttenkäse instead of cream cheese. It’s really good and filled with protein!
So… These four are my favorite vegetarian sandwiches to eat right now! I like to change up the combinations, which means the sandwiches differ every time. That’s what makes it fun! Like the veggie paté, when I discovered that, I ate it a lot. And maybe I will discover something else that’s vegetarian that I like to eat and try that as well. If you do eat meat, I would really recommend trying something vegetarian. That’s what I did and I slowly became vegetarian. Which of these would you like to try? What’s your favorite sandwich to eat?
